Light and lean cookbook review

Hoping you have all had a beautiful holiday season , and that it has been a time of rest and a chance to visit with the people you love. I also hope you have had the chance to reach out and do something for someone less fortunate than yourselves , and felt the joy that brings.
So now that weve all eaten a little too much and put our bodies through the strain of it all , its the perfect time to try a few recipes from light and lean . I am already a huge fan of Lindsay Nixons happy herbivore , I use it at least three times a week , some of my absolute faves are ..The pumpkin bread ( so simple and delish ) 5 spice harmony bowl ( love this , nutrient dense dish ) nacho cheese sauce ( sunday afternoon nutrient packed snack ) It is also packed with gravies and sauces that haven’t disappointed us yet .
so I was thrilled when I saw Lindsay had written light and lean with over 150 low cal vegan recipes with workout plans , so here we are trying those out ! January I am going to make an item a day , but for now I have been trying a few items .
The one thing I notice about these books is SIMPLICITY WITH RESULTS ! You know how you can follow a complex recipe and you spend hours in the kitchen and come out the other side with a BLAH meal , ive had that happen ! Its so so disappointing , you worked so hard and your list was so long . Well this book is so different in that way , as is her previous book , minimal work , maximum result !
I decided to make my girls the soba peanut noodles with edamame , this was a 5 minute prep , I had all the ingredients in my pantry and my girls ate a healthy dinner , which they lOVED . I am a whole food cook , I feed my family whole foods , no junk , no chemicals , no fillers , and I aim for densely nutritious meals , this book hits the mark for me . I cannot wait to try the workouts and the rest of the recipes in the new year .   1. I have all the Happy Herbivore books and am really enjoying the food. I made the pumpkin bread last night (very yummy). Cheater pad Thai is also a big favorite. Then there are a bunch of different additions to oatmeal and that’s helpful. Highly recommended!
